It's just Ellen and I this weekend in the apartment; Christi is visiting a friend in Alabama. We are spending the weekend relaxing mostly, and started the weekend with a bang by going to dinner a Chili's and having Tropical Sunrise Margaritas...trust me, they really are as good as they sound! I discovered them when I was with my mom in Oxford, and we wanted to try something exciting. I'm glad we did, because we had them to celebrate Ellen's 21st birthday as well.
We needed a night full of margaritas, queso and chips, and lots and lots of laughter. It rejuvenated me after such a crazy week. This morning we continued with the good food with my struggled attempt to make banana pancakes with a peanut butter sauce. I found the recipe online and thought it would be a fun thing to try out.
Needless to say they were phenomenal and turned out well. Getting to the end result, though, was not easy. I burnt the first batch and caused the smoke detector to go off in the apartment =( It was definitely worth the wait though. YUMMY!
We're off to take advantage of this beautiful Saturday with a little shopping on the square. Have a great day and a relaxing weekend!!
